Bennett School Kickapoo Crunch Bars

Ingredients:

1 1/2 pound shortening
3 C sugar
3 C brown sugar
1 1/2 pound peanut butter
6 eggs
1 T vanilla
1/2 C milk
pinch of salt
1/8 C baking soda
4 C Coconut
2 1/4 pounds oatmeal
1 1/2 pound chopped peanuts (optional)

Cream Shortening, sugars and peanut butter until light and fluffy. Add eggs and vanilla. Add dry ingredients, mix in milk and peanuts mix well. Bake at 300º F for 12-15 minutes. Watch carefully burns easily. Will puff up then fall when taken out of the oven DO NOT OVER BAKE!!! Frost with powder sugar frosting. Makes 3 or 4 cookie sheets. Wet hands to spread out evenly.
