Best Ever Blueberry Muffins

I got this recipe from another board but I swear it’s my picture. :wink:

These are heavenly! Make a double batch - these CAN be frozen!


2 3/4 c flour
3/4 c sugar
3/4 c brown sugar
1 t. baking powder
1 t baking soda
1/2 t salt
2 large eggs, beaten
1 1/2 sticks unsalted butter, melted (3/4 c)
3/4 c buttermilk
1 T vanilla extract
1 3/4 t lemon extract
1 c blueberries*

Combine flour through salt, in separate bowl combine eggs, butter, buttermilk, and extracts-Add to dry ingredients and stir (do not beat) just until moist. Fold in blueberries. Put batter in lined muffin tins.

Topping: (combine the following)

3/4 old fashion oats
1/4 c sugar AND brown sugar
1/2 stick melted butter

Spoon 1 T on top of each muffin; lightly press into batter. Bake 20-25 min at 375. Muffins freeze well.

*if using frozen blueberries: thaw, rinse and pat dry. This will prevent the batter from turning blue.
