Big Batch Chili

BIG BATCH CHILI
MAKES 15 TO 18 C.

4 lbs. ground chuck
2 medium onions, chopped
1 green pepper, chopped
2 cloves garlic, minced
3 cans (14 ½ oz. each) diced tomatoes
4 cans (8 oz. each) tomato sauce
1 can (6 oz.) tomato paste
¼ c. chili powder
1 T. sugar
1 t. salt
1 t. pepper
½ t. paprika
½ t. ground red pepper
1 bay leaf
2 cans (16 oz. each) light red kidney beans, rinsed and drained
Toppings: sour cream, Cheddar cheese, chopped green onions, sliced ripe olives

Cook chuck; drain. Place in 6-qt. slow cooker; stir in onions and remaining ingredients - except beans. Cook on high 6 to 8 hours. Add beans during last 2 to 3 hours of cooking. If done on the stove, cook 4 to 6 hours. Will freeze well.
