Bigos

Bigos

  • 1 onion – chopped
  • 1 clove garlic – minced
  • 2 tablespoons butter
  • 1 pound cabbage
  • 1 quart sauerkraut – rinsed and drained
  • 1/2 pound mushrooms – sliced
  • 1 pound boneless pork butt – cut in 1" cubes
  • 1 pound boneless veal – cut in 1" cubes
  • 1/2 pound Polish sausage – sliced 1/2" thick
  • 1/2 cup beef stock
  • 1 cup chopped tomatoes
  • 2 tart apples – diced
  • 1/2 cup pitted prunes
  • 1 bay leaf
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup red wine

Combine all ingredients in crockpot and cook on low 8 to 10 hours. Serves 6.
