Ingredients:
15-oz can black beans, drained and rinsed (reserve 1 Tbsp liquid)beans - 1 can
salsa, hot - 3 tbsp
minced scallions - 2
low-fat cottage cheese - 1/2 cup
hot pepper sauce - 1 tsp
cumin - 2 tsp
garlic cloves, minced - 2
coriander - 1 tsp
fresh ground pepper and salt to taste
- Combine all ingredients in a blender and blend until smooth, using bean liquid if necessary to moisten.
