4 cups peas
1/2 pound salt pork
1 cup onions, chopped
1 cup chopped celery
1 cup chopped bell pepper
1 clove garlic
1/2 pound okra, cut up
1 quart or 2 cans tomatoes
2 cans Ro-Tel tomatoes
1 pound popcorn shrimp *
3 tablespoons margarine
Salt and pepper to taste

Soak peas overnight. Add salt pork; start cooking. Saute onions,
celery, bell pepper and garlic. Add to peas with shrimp. Add all
tomatoes and simmer until done.

  • Substitute your favorite meat, thinly sliced chicken, round
    steak or hamburger meat.

Thanks, I cant wait to try this one. We make a Mexican black-eyed pea soup for new years every year- 6 cans of peas, 1 can of rotel, 1 lb browned seasoned hamburger, and 1 lb velveta. It’s a big hit with our family, I’ll try to post it later today.
