BLACK RUSSIAN CHOCOLATE CHIP CAKE
1 package (18.5 ounces) yellow cake mix with pudding in the mix
4 eggs, lightly beaten
1/2 cup cold water
1/2 cup vegetable oil
1 tablespoon instant coffee powder
1/2 cup vodka
1/2 cup miniature semi-sweet chocolate chips
1/2 cup chopped nuts
1/2 cup butter
1/4 cup water
3/4 cup sugar
1/4 cup vodka
1/4 cup Kahlua
To make cake: Preheat oven to 325 degrees. Grease and flour a 10-inch tube pan.
Mix all cake ingredients except chips and nuts. Beat vigorously 2 minutes. Stir in chips and nuts.
Pour batter into prepared pan. Bake until a toothpick inserted near the center comes out clean, about 50 to 60 minutes.
Transfer pan to rack. Cool. Turn cake out onto platter.
To make glaze: Melt butter in a saucepan. Stir in water and sugar. Boil 5 minutes, stirring constantly. Remove from heat. Stir in vodka and Kahlua.
Prick top and sides of cake with a fork. Drizzle glaze slowly and evenly over cake until it is fully absorbed.
