Blue Cheese Vegetable Pizzas

3 small zucchini – thinly sliced
3 stalks celery – thinly sliced
2 carrots – peeled and grated
1 tablespoon olive oil
3 sandwich-size English muffins – split and toasted
1 14-ounce jar Ragú Pizza Quick Sauce
2 tablespoons blue cheese – crumbled

Preheat broiler. In a large skillet, sauté vegetables in olive oil until tender. Top each toasted muffin half with 2 tablespoons pizza sauce, sautéed vegetables and cheese. Broil 6 inches from heat, 46 minutes or until cheese melts.
