I’m single, so I tend to try quick and easy meals where I will not have anything go to waste.
I made this for the first time time yesterday, and did not use a previous recipe. Here is what I did, any comments or suggestions are appreciated.
Bone-in Chicken casserole single portion
1 quarter of a bag frozen mixed vegetables.
1 small garlic clove diced
1 small onion chopped
1 quarter chicken leg and thigh separated, and seasoned (I seasoned w/ garlic powder, paprika, oregano, basil)
1 pkg, Knorrs chicken pasta side dish (uncooked).
1/2 cup milk
1/2 cup water
grated pepper jack cheese (your choice of amount)
dry seasoning of your choice (see seasoned chicken)
Mix the frozen vegetables,garlic, onion,cheese and knorrs chicken pasta mix together in a casserole dish. Season however you like, add chicken, cover chicken with some of the the vegetable mixture. Add the water and milk. Coat top of casserole with more grated cheese. Bake 375 for about 45min to 1hr, until chicken is cooked.
Just a footnote: I would like to experiment more with this recipe, without the Knorrs, however I have not been able to find a knock off for the Knorrs chicken pasta side dish. So I do not know the ingredient’s to use to increase quantity.
