BOOSTERS

Boosters are high-sugar snacks designed to jumpstart your sugar levels when they plummet, so don’t substitute the sugar-free version of flavored gelatin. However, using the lower-fat products is a good idea. These boosters are meant to be frozen in individual portions and taken along with you for emergencies only. They are not meant to be included as part of your daily meal plan.

TAKE-ALONG TREAT

16 oz. container of vanilla frosting
1/4 tsp almond flavoring
1/3 cup white corn syrup
1-1/2 cups finely chopped dried apricots
3 cups icing (confectioner’s) sugar
1 cup flaked coconut
Icing sugar (optional)
Flake coconut (optional)

Combine frosting and flavouring in large bowl. Measure corn syrup into small bowl. Microwave on high (100%) for 30 seconds or warm in samll saucepan on low. Stir in apricots until well coated. Add to frosting. Stir well.

Stir in icing sugar and coconut. Knead with ahdns to combine well. Turn out onto flat surface. Knead, adding icing sugar if required to prevent sticking, until smooth. Measure into 1/2 Tbsp portions. Roll into balls.

Roll in additional icing sugar or coconut. Wrap individual balls in plastic wrap. Freeze. Makes about 52 balls.

SWEET CEREAL CHEWS

1/2 cup light smooth peanut butter
1/4 cup corn syrup
3 cups miniature marshmallows
1/2 tsp vanilla
5 cups corn flakes cereal

Melt peanut butter and corn syrup in large saucepan on low. stir in marshmallows until just melted. Do not overcook. Remove from heat.

stir in vanilla and cereal until well coated. Press firmlyy into greased 9x9-inch pan. Cool to room temperature. Cut into 24 bars. Wrap individual bars in plastic wrap. Freeze. Makes 24 bars.

LOOPY O’s TREAT

2 Tbsp margarine
1/3 cup white corn syrup
3 oz package of fruit-flavored gelating (jelly powder), your favorite (not sugar-free)
4 cup “O”-shaped fruity cereal (such as Fruit Loops)

Melt margarine in large saucepan on medium. Stir in corn syrup and jelly powder. Heat and stir until boiling and jelly powder is dissolved. Remove from heat.

Quickly stir in cereal to coat. Mixture is very sticky, so work fast. Press firmly into greased foil-lined 8x8-inch square pan. Chill just until set. Cut into 18 bars. Wrap individual bars in plastic wrap. Freeze. Makes 18 bars.
