Broiled Lamb Chops

(6 servings)

6 double lamb chops
5 tbsp olive oil
1 garlic clove, sliced
salt and freshly ground pepper to taste
chopped dill or parsley
lemon juice

Marinate lamb chops in olive oil with garlic for at least 1 hour.

Broil on rack about 2 inches from source of heat in a very hot preheated broiler. Brown both sides, cooking a total of 10 minutes for rare, 15 for medium, or 20 for well done. Transfer to warm platter, season with salt and pepper and sprinkle with dill or parsley and lemon juice.

Variations:

Herb-stuffed Lamb Chops

Before cooking, slit chops in thickest part. Cream a little butter with parsley, tarragon or rosemary and stuff chops with mixture. Seal opening with toothpicks. Broil and serve as indicated above.

Marinated Lamb Chops

Marinate chops for several hours in a mixture of 3/4 cup red wine, 1/4 cup olive oil, 2 crushed garlic cloves, 1 tsp salt, 6 peppercorns, and 1 tsp oregano. Broil as above.
