Buca Di Beppo Garlic Mashed Potatoes

1-1/2 pounds baby red potatoes
1-2 Tablespoons fresh chopped garlic
2/3 cup fresh grated Romano [Pecarino is better if you can find it]
1/4 pound butter [no substitutes]
1/2 teaspoon dried leaf oregano
1/2 teaspoon salt
Half and half or milk can be added depending on the consistency of the potatoes

Wash potatoes and remove bad spots [get rid of green spots!] Place potatoes in a 4 1/2 quart pan; cover with cold water and bring to a boil, till done.

Drain and place immediately in 3 quart bowl. Combine with all the remaining ingredients, except half and half and mix well using a wire whisk. Slowly add half and half until desired consistency is reached. Adjust flavors and seasoning and place in a 250 degree oven until ready to to serve
