1 lb. dried pinto or red beans, rinsed
1/2 lb. salt pork, slab bacon or smoked ham
2 medium onions, peeled and thinly sliced
2 large cloves garlic, crushed
1 small bay leaf
1 t. salt
1 can (16 oz.) tomatoes, undrained
1/2 c. coarsely chopped green bell pepper
2 T. brown sugar
2 t. chili powder
1/2 t. dry mustard
1/4 t. crushed oregano or cumin
3 c. water
Place beans in saucepot ot Dutch oven. Add 1 1/2 qts. water. Cover and let stand overnight. The next day - drain and transfer to crockpot.
Depending on the type of meat used, wash salt pork thoroughly; slice through pork or bacon twice each way not quite to the rind; cut ham into 1/2-inch cubes. Add to cooker with remaining ingredients; mix.
Cover and cook on HIGH 1 hour. Turn control to LOW and cook 20 to 22 hours.
