4 tablespoons butter
1/4 cup sugar
2 teaspoons grated lemon rind
1 cup water
1 cup flour
4 eggs
Oil for deep frying

Combine first four ingredients in a saucepan. Bring to boil- stirring occasionally. Add flour all at once- beating hard.

Cook about 2 minutes until dough leaves sides of the pan. Remove from heat - add eggs -1 at a time. Beat until smooth n shiny. Form balls of the dough with 2 teaspoons - fry in preheated 375°F oil for 5 minutes until puffed -lightly browned.Drain on paper towels.


1 cup dark brown sugar
3 tablespoons flour
1 cup water
2 tablespoons heavy cream
1 tablespoon butter
1/2 teaspoon vanilla

Combine sugar - flour in saucepan - stir in water gradually. Cook over medium heat- stirring constantly- until mixture thickens. Add cream, butter, vanilla and mix well.

Serve this hot sauce with the above fritters.
