Burl Ives Barbecue Sauce
1/4 cup olive oil
1 clove garlic, grated
1 medium onion, grated
1 tsp dry mustard
1 tsp salt
1 tsp paprika
chili powder to taste
1/2 tsp black pepper (freshly ground from peppercorns)
1 cup brewed coffee, black, strong and unsweetened
1/3 cup lemon and lime juice, combined
3 Tbsp dark honey
1 cup water
1 cup of fresh coffee grounds tied in muslin cloth, bag style.
Saute garlic and onion in olive oil for a few minutes.
Stir dry ingredients together and add to the sauteed garlic and onions.
Stir in the liquid ingredients.
Simmer for 1/2 hour.
Tie muslin cloth bag of coffee grounds to a stick. Soak in cooked bbq sauce.
Use bbq sauce soaked muslin cloth bag of coffee grounds to baste meat
as it cooks. Keep dipping muslin cloth bag of coffee grounds into bbq sauce and basting meat as it cooks.
