Even though today is St. Patrick’s Day - I will have to wait until Monday or Tuesday for my St. Paddy’s meal! Lent has to come first in my house - and Sunday is St. Joseph’s Day - so that will be a definite feast day in our home.
Today is lemon-pepper haddock fillets: Fresh fillets sprinkled with fresh minced garlic, grated lemon peel, kosher salt, cracked black pepper, fresh parsley and a lemon slice on top; broiled until done. Served with steamed red potatoes (I scrub and leave the skins on, then quarter) and steamed carrots (cut in chunks). Butter and sour cream on the side for those.
Fresh spinach leaves and red cabbage with olive oil, vinegar, minced garlic, kosher salt, cracked pepper and fresh parsley - suateed.
