Butterscotch Yams

6 medium yams – cook,peel, quarter
1/2 cup light corn syrup – or dark
1/2 cup firmly packed light brown sugar
1/4 cup evaporated skim milk
1 teaspoon butter
1/4 teaspoon salt
1/2 teaspoon cinnamon

Preheat oven to 325ºF. Arrange yams in single layer in 13x9x2 inch baking dish. Bake 15 min. Meanwhile, combine remaining ingredients in a med. saucepan. Stirring constantly, bring to boil over med. heat, boil for 5 min. Pour over yams. Return dish to oven and bake, basting frequently, for at least 15 min.

Serves 6.
