Cabbage and Chicken Soup

Ingredients:

water - 4 cups
low-fat, low-sodium chicken broth - 3 cups
chopped tomatoes - 2 cups
celery stalk, chopped - 1/2
green onions, chopped with tops - 4
potato, peeled and diced - 1
bay leaf - 1
salt - 1 tsp
thyme - 1/2 tsp
caraway seeds - 1/4 tsp
shredded cabbage - 3 cups
chopped cooked chicken - 1 cup
lemon juice - 1 tbsp
sugar - 2 tsp
Preparation Instructions

  1. In a large soup pot, combine the water, broth, tomatoes, celery, onion, potato, bay leaf, salt, thyme, and caraway seeds.

  2. Simmer for 30 minutes to 1 hour. Add the cabbage, chicken, lemon juice, and sugar. Remove the bay leaf and serve.
