cabbage casserole,potato salad

Cabbage Casserole
1 med. head cabbage, chopped 2 lbs. ground beef 1 onion, chopped 2 cans cream of mushroom soup 1/2 c. ketchup 1 ( 14 1/2 oz.) can diced tomatoes

Put cabbage in a long baking dish. Brown beef in skillet, drain. Add chopped onion, soup, tomatoes, salt and pepper to taste. Stir to blend, pour over cabbage. Cover and bake 1 1/2 hr. at 425 degrees.

Old Timey Potato Salad
4 med. potatoes 6 T. vinegar 1/2 c. chopped sweet pickles 1/2 c. onion 1/2 c. celery 1/3 c. sugar 3/4 c. salad dressing 1/4 c. mustard 3 hard boiled eggs 2 T. butter salt and pepper to taste

Peel and quarter potatoes, boil until tender. Drain. Add butter while hot. Add sugar , pepper, salt, and vinegar. Mash. Add onion, pickles, eggs and salad dressing, and celery. If celery is not available use 1 t. celery seeds.

Served with corn, white beans and cornbread.
