1 head of cabbage, cut up
1 pkg Eckrich sausage, sliced (to your desire)
1 onion, chopped (optional what size you want, I use small to medium)
1 bell pepper, chopped
1 12oz can stewed tomatoes
1 12oz can whole kernel corn, drained
3/4 c grated cheese
Steam cabbage about 10 minutes or until clear, set aside. Brown sausage in skillet wil small amount of oil. Take sausage out of skillet and saute onions and bell peppers in drippings. Add corn and tomatoes.
In cassarole dish (I used 9 x 13 non-stick pan) layer cabbage and vegetable mixture; top with sausage and then grated cheese. Bake about 30 minutes at 350 degrees. Serve with beans and cornbread, or just eat it by itself.
I don’t eat cheese…but it’s still delicious. I always double my receipe when I make this…hubby loves it…I have this as a meal by itself…you can add any side dish you want to this. I was raised on southern foods so just about any vegetable will go…can have cornbread or dinner rolls…your choice and ENJOY…
