Caesar Dressing

Most of us have a love-hate relationship with Caesar dressing — love the flavor, hate the high fat content and the raw egg. This easy version eliminates all the negatives, deliciously. It will keep in the refrigerator up to two days, but each day the garlic will become a little more powerful. If you won’t be using it immediately, use a half clove of garlic instead.

Serving Size: 1 Tbsp


cottage cheese - 1/4 cup
clove garlic, minced - 1
grated Parmesan cheese - 2 tbsp
lemon juice - 2 tbsp
lite mayonnaise - 2 tbsp
anchovy paste - 1 tsp
Dijon mustard - 1/2 tsp

  1. In a food processor or blender, puree the cottage cheese and garlic until smooth. Add the Parmesan cheese, the lemon juice, mayonnaise, anchovy paste (which is optional), and the mustard; pulse unmtil smooth. Let stand 10 minutes to allow the flavors to blend.
