Caesar’s Macaroni and Cheese

1 box macaroni and cheese
4 tbsps extra virgin olive oil
1/2 cup onion
2 cloves garlic, minced
1/2 cup red pepper
1/2 cup white wine
1/4 cup kalamata olives, seeded and sliced or chopped
1 cup deli prosciutto, julienned
1/4 cup parmesan cheese
2 tbsp fresh basil, snipped
1 sprig basil, for garnish

Cook noodles according to package directions. In a small skillet, heat olive oil over medium setting. Add onions, garlic and red pepper. Saute until onion are softened. Add white wine, olives, prosciutto, parmesan and cheese from mix. Simmer for two minutes, or until thickened and creamy. If too dry, add water. Stir in snipped basil. Garnish with basil sprig, and serve. Makes 4 servings.
