Cajun Brunch Bake

6 eggs lightly beaten 2 c. milk 1 lb. bacon, cooked and crumbled 6 slices bread, cubed 1 med. potato peeled and diced 1 c. shredded cheddar cheese 1/2 c. chopped onion 1 1/2 t. cajun seasoning 1 t. salt
In a bowl combine al ingredients. Transfer to greased 11x7 inch pan. Cover and refrigerate overnight. Remove from frig 30 minutes before baking. Bake uncovered at 350 for 45 to 50 minutes. Let stand 10 minutes before serving.
