Cajun Sausage Soup
1 (8- to 10-inch) link spicy Cajun sausage
1 1/2 cups frozen black-eyed peas
4 cups water
1/2 medium onion, chopped
1 clove garlic, minced
Pinch of red pepper flakes
3/4 cup frozen cut green beans
Salt and pepper to taste
Put sausage, black-eyed peas, water, onion, garlic, pepper flakes and green beans in a slow cooker. Turn on heat and cook 3-4 hours or until peas and beans are tender. Season with salt and pepper to taste.
Note: If you want a thicker soup, add less water.
Makes 6-8 servings.
