Cantonese Sweet And Sour Soup

CANTONESE SWEET AND SOUR SOUP
Serves 4

4 c. chicken broth
1/2 cooked chicken breast, julienned
1/2 small can bamboo shoots, diced
1/2 small can mushrooms, sliced
1 T. fresh lemon juice
Salt to taste
1/4 t. pepper
1 T. soy sauce
1 large egg, beaten

Heat chicken broth.

Add chicken, bamboo shoots and mushrooms; simmer 5 minutes.

Add lemon juice, salt to taste, pepper and soy sauce; heat through, stirring ocnstantly.

Add egg; stir one minute more, but do not boil.

Adjust seasonings as desired.

OPTIONAL: Add fresh spinach or chopped celery may be added.
