2 onions, diced
2 tbsp, olive oil
2 tbsp. balsamic vinegar
1 tbsp. brown sugar or honey
2 cups lite sour cream
1/2 cup lite cream cheese (Neufchatel), softened
3 tbsp. lite mayonnaise, optional
1/2 cup grated parmesan cheese
1/2-1 tsp. garam masala
1 tbsp. dried chives, optional
1 tbsp. dried parsley
1/4 cup cooked bacon bits
1/2 tsp. kosher salt
1/2 tsp. pepper
Heat the olive oil in a large saute pan over medium-high heat. Add the onions and reduce the heat to medium-low. Add the balsamic vinegar, salt and brown sugar, cooking for about 10 minutes or until the onions are soft and turning dark golden brown (like toasted whole-wheat bread). Meanwhile, mix the remaining ingredients together and add the onions. Chill for at least two hours.
Yield: 3 cups.
Note: Garam masala: 1/2 tsp. cinnamon, 1/8 tsp. ground bay, 1 tbsp. ground cumin, 1 1/2 tbsp. ground coriander, 1/2 tbsp. ground cardamom, 1/2 tsp. ground pepper, 1/2 tsp. ground cloves, 1 tsp. paprika, 1/8 tsp. ground nutmeg.
