This is a great make ahead appetizer. I usually make it in the am and by the evening it is absolutely delicious!
CARIBBEAN SHRIMP TOSS
Stir 1 tbsp. Veg. Oil with 2 tbsp finely chopped fresh ginger, juice from 2 limes, 2 crushed garlic cloves, 1 tbsp. Soy sauce and Â½ tsp. Each of sugar and hot pepper flakes. Stir in Â½ cup finely chopped fresh coriander and 2 lbs of large, tail-on cooked shrimp (I use frozen pkgs.) Cover and refrigerate up to a day. Stir occasionally. Serve with triangles of flat bread.
