CARNE SECA OMELET PINWHEELS

2 large California Fresh Eggs
OR
3 1/2 ounces frozen whole egg product
1 ounce green peppers, diced
2 ounces carne seca (machaca), rehydrated
2 ounces Monterey Jack cheese, grated
1 flour tortilla

  1. Mix egg with diced green peppers.

  2. Prepare omelet.

  3. Sprinkle carne seca and cheese over surface.

  4. Remove flat omelet from pan and place on top of tortilla. Roll together jelly roll style.

To serve: Cut crosswise into slices and serve with salsa.
