Carrabba’s Meatballs®
1 pound ground beef
1/2 pound ground pork
1/3 cup dry bread crumbs
4 cloves garlic - minced
2 eggs - lightly beaten
1 small. yellow onion - minced
3 tablespoons. grated Parmesan cheese
3 tablespoons. grated Romano cheese
3 tablespoons. minced fresh parsley
3 tablespoons. minced fresh basil
salt and pepper - to taste
1 cup olive oil
Combine all ingredients, except olive oil, and form into 1 1/2" balls.
Pour olive oil in a 13" X 9" X 2" baking dish and place meatballs on top;
swirl pan around to coat meatballs in oil.
Bake in a 400 degree oven for 20 minutes, or until golden brown.
Drain on paper towels.
