Carrot Salad

Ingredients

2 carrots
2 hot green chilies chopped finely vary it based on your spice tolerance level
2 spoons grated coconut optional
2 tablespoons lime juice
handful of chopped coriander leaves
1 tsp mustard seeds
1 tsp ghee for seasoning
salt to taste

Method
Grate carrots. I grate carrot, green chilies and chopped coconut pieces in an automatic salad shooter.
Mix grated carrot, chopped green chili, lime juice, grated coconut, chopped coriander leaves and salt to make a salad.
Make seasoning with ghee and mustard.
Add seasoning to the salad.

Here is a simple recipe for a nice carrot salad.
Grate one or two carrots, mix them in plain natural yoghurt. Add salt to taste.
Alternatively mix grated carrots with chopped lettuce leaves (iceberg lettuce will also do). Dress in olive oil and lemon juice. Salt to taste.

INGREDIENTS
3 cups julienned carrots
1 (20 ounce) can pineapple tidbits, drained
1 cup miniature marshmallows
1/2 cup raisins
1/2 cup diced celery (optional)
2/3 cup creamy salad dressing
2 teaspoons white sugar
DIRECTIONS
In a large bowl, toss together the carrots, pineapple, marshmallows, raisins and celery.
Whisk together the salad dressing and sugar; pour over salad and toss. Chill for at least 12 hours.
