Cavatelli Carbonara

Ingredients: per person

2oz. Small diced pancetta
1T Dijon Mustard
1 Egg (beaten)
6oz. Heavy Cream
1t Coarse ground pepper
8oz. Cooked Cavatelli pasta
1oz. Chopped parsley and green onion
Salt and White peper to taste
Cooking oil

In a pre-heated pan, put a small amount of cooking oil and pancetta. Cook until the pancetta is crisp. Add heavy cream and dijon. Stir until the mustard is fully incorporated into the cream. Let stand until you get a rolling boil with the cream mixture. Add the pasta and cracked pepper and toss or stir. Slowly add the egg into the pan while constantly mixing. The sauce will tighten as the egg cooks in the mixture. Finally, add in chopped parsley and onion and toss. The consistency should be creamy but not loose.
