Chalupas

2 pounds lean pork, cubed
3 tablespoons shortening
2 tablespoons flour
1 cup water
1-2 teaspoons ground cumin
Garlic to taste
1 14-ounce can tomatoes
2 7-ounce cans, chopped, mild green chilies
8 crisply friend corn tortillas
2 whole chicken breasts, poached and shredded
3 cups refried beans
2 cups guacamole
1 1/2 cups grated Cheddar cheese (6 ounces)
1 cup sour cream (8 ounces)

Brown pork cubes in shortening. Stir in flour. Add water, cumin, garlic salt, tomatoes and green chilies. Simmer until thick, stirring occasionally. To assemble each chalupa, being with a crisp. tortilla and layer on refried beans, chicken, sauce, cheese, guacamole and sour cream. This is a very fun dish for the family.
