Cheese Soup


2 T. finely chopped onion
2 T. butter
3 T. flour
2 c. chicken broth or bouillon
1/2 c. finely chopped celery
1/2 c. grated carrot
1 1/2 c. milk
1 1/2 c. shredded sharp Cheddar cheese (6 oz.)
1/4 c. croutons

Saute onion in butter in saucepan; stir in flour; add broth gradually, stirring until smooth.
Transfer sauce to crockpot; add celery and carrot; stir. Cover and cook on LOW 4 to 6 hours.

Add milk and cheese to soup; stir. Cover and cook on LOW for 1 hour.
Serve topped with croutons.
