Cheese Stuffed Chicken

4 to 6 boneless, skinless chicken breasts
1 package taco seasoning
8 ounces Colby-Monterey Jack cheese
1 roll butter flavored round crackers

Crush crackers into crumbs. Add taco seasoning to crumbs and mix. Set aside. Flatten chicken breasts with skin sides down. Cut cheese in small cubes. Place cheese cubes in center of flattened chicken. Fold up chicken to cover cheese. Dampen chicken rolls with water and roll in cracker crumb mixture. Chicken may be baked in muffin tins to help hold shape. Or, they may be tied with string before rolling in crumbs to help keep them closed.

Bake at 350°F for 30 to 45 minutes until done.
