Cheesy Hash Browns with Sour Cream

I can’t remember the site I got this from, but I tried it and couldn’t resist it!! I always experiment with different levels of sour cream and cheddar cheese and it comes out wonderful every time…

Cheesy Hash Browns with Sour Cream

1 package (1 lb., 4 oz.) of plain pre-prepared hash browns
2-1/2 cups grated cheddar cheese
1/4 cup butter
1 cup sour cream
1/2 cup minced onion
Salt, pepper and paprika

Melt butter and 2 cups of the cheese in a heavy sauce pan, stirring constantly for about 1 minute. Remove from heat. In a large bowl, pour in the potatoes, onions, and sour cream. Now mix in the cheese mixture and season with salt and pepper. Pour all into a 9-inch square baking pan sprayed with oil. Sprinkle the remaining cheese on top. Bake 30 minutes at 350 degrees until bubbly.
