CHEESY POTATOES

32 ounces shredded potatoes
1 pint half-and-half
1 stick margarine
8 oz. shredded cheddar cheese
Salt and pepper to taste

Preheat oven to 350* F. Heat half-and-half and margarine in sauce pan on the stove, just until margarine is melted. Do not boil. Mix half of cheese into potatoes, then spread in 13 X 9-inch baking dish. Pour half and half mixture over potatoes. Season with salt and pepper to taste, then sprinkle remaining cheese on top. Bake uncovered for one hour.
