Cherry fool



2 C. fresh cherries, pitted

¼ C. sugar

1 tsp. almond extract

1 ½ C. heavy whipping cream

¼ C. powdered sugar

½ C. sliced almonds


  1. Place the cherries and sugar into a blender or food processor and pulse at least 20 times until cherries are coarsely chopped, but not pureed, set aside.

  2. In a medium bowl using a hand mixer on medium speed whip the almond extract, heavy whipping cream and powdered sugar until soft peaks form.

  3. Using a rubber spatula gently fold the coarse cherries into the heavy cream until just blended, spoon into the bottom of a glass jar, sprinkle with some almonds and add one more scoop of the cherry mixture topped with a few more almonds.
