Chewy Cranberry & Applesauce Oatmeal Cookies

Yields about 4 dozen cookies

1/2 pound butter, softened
1 cup firmly packed brown sugar
1 cup applesauce
1 egg
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
2 1/2 cups old-fashioned oats, uncooked
1 cup dried, sweetened cranberries

Preheat oven to 350º F.

In a large bowl, beat butter and sugar until creamy. Add next 3 ingredients and beat until smooth.

In a separate bowl, combine flour, baking soda, cinnamon and salt. Gradually add to mixture in large bowl, mixing well.
Stir in oats and cranberries. Mix well.

Drop the dough by rounded tablespoonfuls onto un-greased cookie sheets and bake for 11-13 minutes, or until cookies are golden brown.

Let cool for 1 minute on cookie sheets before transferring to wire rack; let cookies cool completely
