Chicago Public School Cafeteria Butter Cookies

Chicago Public School Cafeteria Butter Cookies (cut down version)

2 sticks (1 cup) softened butter
2/3 cup granulated sugar
2 cups plus 2 tablespoons flour
2 teaspoons vanilla extract

Preheat oven to 350 degrees F.

Cream butter and sugar until fluffy. Add vanilla extract. Mix in flour in small increments. Roll dough into balls; Flatten on ungreased cookie sheets. Bake until golden brown.

Makes about 1 1/2 dozen.

This reciept sounds good i will write back after making.

I was born and raised in Chicago and remember these butter cookies well. I plan on making them to see if its the same as the ones I remember. I live in Las Vegas and there is not a decent bakery to be found. I was just back in Chicago and came home with a big container of butter cookies. YUM!
