Chicken and Noodle Stir-Fry

3 skinless boneless chicken breasts, cut up
1 T. PLUS 4 t. cornstarch, divided
1 small onion, sliced
2 cloves garlic, minced
3 T. vegetable oil
1 pkg. (16 oz.) frozen vegetable medley
1/4 c. PLUS 2 T. soy sauce
8 oz. vermicelli, cooked

Cut chicken into thin strips; coat with 1 T. cornstarch; stir fry with onion and garlic in hot oil 3 minutes. Add frozen vegggies; stir fry 2 to 3 minutes until heated. Combine 2/3 c. water, soy sauce and 4 t. cornstarch; stir into chicken mixture. Cook, stirring, until sauce boils and thickens. Add vermicelli; toss to combine.

Serves 4 to 6
