3 Tbsp olive oil
2 garlic cloves chopped
1/2 lb chicken breasts cut into 1/2" strips
1 1/2 c small broccoli flowerets
3/4 cup oil packed sun dried tomatoes, drained & sliced (I use more because I LOVE them)
1 tsp dried basil
pinch crushed red pepper flakes
salt & pepper to taste
1/4 c dry white wine
3/4 c chicken broth
1 Tbsp butter or margarine
1/2 lb bowtie pasta cooked according to pkg directions
grated Parmesan cheese
Heat oil in a large skillet over med heat. Saute garlic until golden. Add chicken and saute until almost completely cooked. Add broccoli and saute until crisp tender. Add sun dried tomatoes, basil, red pepper flakes and salt and pepper. Add wine, broth and butter and cook 3-5 min or until heated through.
Toss the cooked pasta with the chicken mixture. Serve with Parmesan cheese.
