Chicken Broccoli Frittata

CHICKEN BROCCOLI FRITTATA
SERVES 2

1 T. margarine
1 c. broccoli florets
½ c. chopped cooked chicken
¼ c. finely chopped tomato
¼ c. finely chopped onion
½ t. Italian seasoning
1/8 t. salt
1 c. egg beaters or eggs

Place non-stick skillet over medium heat until hot; melt margarine. Add broccoli, chicken, tomato, onion, seasoning and salt; cook until broccoli is crisp tender. Reduce heat to low; pour egg over; cover. Cook 7 to 10 minutes or until eggs are cooked on bottom and set on top. Serve warm.
