RECIPE: CHICKEN FIESTA CASSEROLEÂ Â

INGREDIENTS:Â Â
1 tablespoon canola oil Â
6 chicken breast halves, cubed Â
1/2 cup chopped green pepper Â
1/2 cup chopped onion Â
3 cups chunky salsa Â
1 cup chicken broth Â
1 1/2 cup quick cooking rice Â
1 cup shredded Monterey Jack cheese Â
DIRECTIONS:Â Â
Heat a large heavy skillet over medium high heat. Add the Â
oil and chicken and sauté until the chicken is lightly Â
browned. Add the green pepper and onion and saute until Â
the chicken is thoroughly cooked. Add the salsa and broth Â
and bring to a boil. Stir in the rice and mix well. Toss Â
the cheese on top of the dish, cover, and remove from the Â
heat. Let rest for five minutes to cook the rice and serve Â
hot. Â
