Chicken Foccacia Sandwich
Four boneless chicken breasts baked with Dijon Mustard spread on them and cubed up
Broccoli stems cooked - one bag of frozen works nicely
One and one-half cups sliced mozzarella cheese
I make the bread dough in my bread machine.
Put lots of olive oil, garlic, basil, and garlic pepper on top and bake.
Slice down the middle of the bread so you have a lid and a bottom.
Meanwhile, you cook the chicken with Dijon mustard spread on the top. Do this while the bread machine is making the dough.
After the chicken is done, cube it up.
Put the cubed up chicken on the bottom half of the bread.
Put cooked broccoli stems/heads on the top of the chicken.
Put mozzarella on top of the broccoli.
Bake until mozzarella is melted.
Put the lid on and bake for another 5 minutes.
Take out of the oven and cut into squares for sandwiches.
You can also buy the bread or use Italian bread sliced down the middle.
