Chicken Meal-in-One

4 1/2 cups frozen, shredded hash brown potatoes, thawed
2 cups frozen cut green beans, thawed
1 cup frozen, sliced carrots, thawed
4 chicken breasts
1 can cream of chicken or mushroom soup, undiluted
3/4 cup water
2 Tbsp. dry onion soup mix
salt and pepper to taste
In an ungreased 9x13 baking dish, combine hash browns, beans and carrots. Top with chicken. Combine remaining ingredients; pour over chicken and vegetables. Cover and bake at 375 for 30 minutes. Uncover and bake 15 minutes longer or until chicken juices run clear. If you use chicken with the bones increase first cooking time to 50 minutes and second to 25-30 minutes. You can also double to gravy if you want and even use fresh veggies but par boil them first to help with the cooking time.
