Chicken Paprika

Chicken Paprika

4 Chicken breasts, boned, halved
1 thinly sliced green Anaheim or bell pepper (I also use red pepper sometimes)
2 Tbsp. olive oil
2 cloves garlic, chopped
1 Tbsp. Hungarian Paprika (I use 1 tsp. hot and 2 tsp. mild)
Seasoning salt
Fresh ground pepper to taste
1 cup chopped tomato
1/2 cup sour cream
Noodles for 4

Heat oil in a large sauté pan. Sauté chicken on both sides until golden brown
(2-3 minutes). Set chicken on a warm plate and put aside. Add garlic and cook a few seconds.

Stir in paprika, tomato, pepper, and seasoning. Cook and stir until tomato is soft. Stir in sour
cream. Return chicken to pan, turning pieces over in the sauce to coat. Simmer 1-2 minutes
more. Serve over noodles.

We eat chicken a lot at my house, so this is right up my alley. It sounds good, and quick and easy too.
