Chicken Peanut Mole


2 tablespoons canola oil
3-4 cloves chopped garlic
1 cup chopped onion
1/2 cup chopped green bell pepper
1 tablespoon chile powder
1 teaspoon dried oregano
1/4 teaspoon ground cinnamon
1 tablespoon red wine vinegar
1 cup chicken broth
1-14 and 1/2 oz can diced tomatoes, and the liquid
1/2 cup creamy peanut butter
salt and pepper
4 boneless, skinless chicken breasts, cut into 1/2 inch strips
1/2 oz. grated unsweetened chocolate
sour cream
chopped scallions
chopped cilantro

In a large skillet or saucepan, heat oil over medium heat.
Add the garlic, onions, and bell pepper, cook about 1 minute, stirring often.
Add the chile powder, oregano, and cinnamon. Cook about 1 minute, stirring often.
Add the vinegar and stir to combine well. Add the chicken stock, tomatoes and the liquid, and peanut butter. Stir to blend well and bring to a boil, stirring often.
