Serves 10 (Appetizer)

1 lb. boneless. skinless chicken breast, smoked and diced
1 tbsp. Italian seasoning
1 tbsp. olive oil
8 pieces of Phyllo dough
Butter, melted
salt and pepper
Brie Cheese, sliced thin
Salt and pepper

  1. Preheat the oven to 350F. Combine the smoked chicken with the spices, olive oil and salt and pepper in a small bowl and set aside.
  2. Place one piece of the Phyllo dough on your work surface and brush with butter. Top with another piece of dough and brush with butter and repeat for a total of four layers finishing with brushed butter. Place a strip of Brie Cheese on the lower one sixth of the Phyllo topped with smoked, diced chicken.
  3. Roll the phyllo dough up lengthwise, tucking the chicken, Brie mixture inside as you roll. Pinch the ends of the roll together and place seam side down on a baking sheet. Brush the roll-up with butter. Bake for 10 to 15 minutes, or until golden brown. Remove and set aside.
  4. Slice into 1-inch slices and serve.
