chicken Taco Dinner

4 boneless chicken breast 4 t. taco seasoning 2 c. sliced potatoes 1 onion, sliced 8 oz. pkg. sliced mushrooms 1 c. shredded mexican blend cheese 1/2 c. salsa sour cream
Preheat oven to 400. Sprinkle chicken and potatoes with seasonings. Place 1/2 c. potatoes in the middle of 4 squares aluminum foil. Top with onions and mushrooms. Place chicken on top 1/4 of cheese and 2 T. salsa. Fold up foil to seal. Place pkgs. on a cookie sheet. Bake 45 minutes or until tender. Serve topped with sour cream if desired. You can change the veggies to your liking. The recipe didn’t call for onions or mushrooms but I added them Also added some baby carrots to hubby’s pkg. The advantage to this kind of meal is you can adjust ingredients according to your familys likes and dislikes and when dinner is over you just throw the foil away. I served mine with a green salad.
