chicken thighs

Last week I made chicken thighs -

Cleaned thighs and placed in single layer in baking pan with a bit of olive oil; thin sliced red bell pepper over the thighs; thin sliced onion over that. Fresh garlic cloves scattered.

I combined 1/2 c. apricot/pineapple preserves with 1/4 c. Worchestershire sauce and 1 T. brown sugar - poured over chicken.

375* F. till done (took about an hour)

This can be served with hot rice, rice pilaf or couscous.
